Ingredients
- 2 oz. salt pork, diced or 3 slices bacon, cut up
- 1 medium onion, chopped (about 1/2 c.)
- 1 medium onion, chopped (about 1/2 c.)
- 1 medium green pepper, chopped (about 1 c.)
- 1 c. uncooked regular long grain rice
- 1 c. water
- 1 1/2 tsp. salt
- 1 (15 to 16 oz.) can red kidney beans, drained
Method
- Cook salt pork in 3-quart saucepan, stirring occasionally, until crisp.
- Stir in onion and bell pepper.
- Cook, stirring occasionally, until onion is tender.
- Stir in remaining ingredients.
- Heat to boiling, stirring once or twice.
- Reduce heat.
- Cover and simmer 14 minutes.
- Do not lift cover or stir. Remove from heat.
- Fluff lightly with fork.
- Cover and let steam 5 to 10 minutes.
- Yields 12 servings.
