Ingredients

  • 2 oz. salt pork, diced or 3 slices bacon, cut up
  • 1 medium onion, chopped (about 1/2 c.)
  • 1 medium onion, chopped (about 1/2 c.)
  • 1 medium green pepper, chopped (about 1 c.)
  • 1 c. uncooked regular long grain rice
  • 1 c. water
  • 1 1/2 tsp. salt
  • 1 (15 to 16 oz.) can red kidney beans, drained

Method

  • Cook salt pork in 3-quart saucepan, stirring occasionally, until crisp.
  • Stir in onion and bell pepper.
  • Cook, stirring occasionally, until onion is tender.
  • Stir in remaining ingredients.
  • Heat to boiling, stirring once or twice.
  • Reduce heat.
  • Cover and simmer 14 minutes.
  • Do not lift cover or stir. Remove from heat.
  • Fluff lightly with fork.
  • Cover and let steam 5 to 10 minutes.
  • Yields 12 servings.
