Ingredients

  • 2 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 1/4 c. sugar, divided
  • 3/4 c. vegetable oil
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 (10 oz.) pkg. mint flavored semi-sweet chocolate morsels

Method

  • Preheat oven to 350°.
  • In small bowl, combine flour, baking powder and salt; set aside.
  • In large bowl, combine 1 cup sugar and vegetable oil; mix well.
  • Beat in eggs and vanilla extract. Gradually add flour mixture.
  • Stir in mint chips.
  • Drop by rounded teaspoonfuls onto ungreased cookie sheet.
  • Shape into balls; roll in remaining sugar.
  • Bake for 8 to 10 minutes.
  • Makes about 5 1/2 dozen cookies.
