Ingredients

  • 6 oz. pkg. mint chocolate chips
  • 2/3 c. shortening
  • 1/2 c. sugar
  • 1 egg
  • 1/4 c. corn syrup
  • 1 3/4 c. flour, sifted
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/4 c. sugar (for rolling)

Method

  • Preheat oven to 350°.
  • Melt mint chocolate chips over hot (not boiling) water.
  • Remove from heat.
  • Combine shortening, sugar and egg in bowl.
  • Beat until creamy.
  • Blend in melted chocolate and corn syrup.
  • Sift together flour, baking soda, cinnamon and salt and gradually stir into chocolate mixture.
  • Shape dough into balls, using 1 level tablespoon each.
  • Roll balls of dough in sugar. Place 3-inches apart on ungreased cookie sheet.
  • Bake for 15 minutes.
  • Let stand a few minutes before removing from pan.
  • Makes 3 dozen (3-inch) cookies.
