Ingredients

  • 1 Tbsp. oil
  • 1/4 lb. boned chicken breast, cut in strips
  • 2 large carrots, sliced
  • 1 small red pepper, cut in strips
  • 1 c. snow peas
  • 2 green onions, cut
  • 2 cloves garlic, minced
  • 4 Tbsp. cornstarch
  • 1/2 tsp. ginger
  • 1 c. chicken broth
  • 3 Tbsp. reduced sodium soy sauce
  • brown rice, uncooked

Method

  • Heat oil in large skillet.
  • Add chicken, vegetables and garlic.
  • Stir-fry until chicken is cooked through.
  • Mix cornstarch, ginger, broth and soy sauce until smooth; stir into skillet.
  • Stirring constantly, bring to a boil.
  • Boil 1 minute.
