- 1 Tbsp. oil
- 1/4 lb. boned chicken breast, cut in strips
- 2 large carrots, sliced
- 1 small red pepper, cut in strips
- 1 c. snow peas
- 2 green onions, cut
- 2 cloves garlic, minced
- 4 Tbsp. cornstarch
- 1/2 tsp. ginger
- 1 c. chicken broth
- 3 Tbsp. reduced sodium soy sauce
- brown rice, uncooked
Method
- Heat oil in large skillet.
- Add chicken, vegetables and garlic.
- Stir-fry until chicken is cooked through.
- Mix cornstarch, ginger, broth and soy sauce until smooth; stir into skillet.
- Stirring constantly, bring to a boil.
- Boil 1 minute.
