Ingredients

  • 3 lb. chicken, cut in pieces
  • 2 whole bay leaves
  • 1 tsp. salt
  • 1 tsp. white pepper
  • 1 tsp. garlic powder
  • 1/2 tsp. cayenne pepper
  • 1/4 tsp. black pepper
  • 2 sticks margarine
  • 1 1/2 c. chopped onion
  • 1 1/2 c. chopped celery
  • 1 1/2 c. chopped green pepper
  • 1/2 tsp. Tabasco
  • 3/4 c. tomato sauce
  • 2 c. uncooked rice
  • 3 c. chicken stock
  • 1 2/3 c. chopped ham

Method

  • Cut the meat off the bones and store in the refrigerator until you are ready.
  • Combine the seasonings (next 6 ingredients) in a small bowl and set aside.
