Ingredients
- 8 to 10 medium potatoes
- 1/2 c. chopped onion
- 2 slices white bread, cubed
- 1 tsp. paprika
- 2 sticks butter, melted
- 1 lb. Velveeta cheese
- 1 small jar pimentos (4 oz.)
- 2 Tbsp. parsley
- 1 tsp. garlic salt
Method
- Boil potatoes with skin until tender; cut into bite size pieces.
- Place potatoes in large, flat casserole dish.
- Mix parsley, paprika and garlic salt together.
- Sprinkle over potatoes.
- Mix pimentos, onion and cubed cheese.
- Place over potatoes.
- Top cheese with bread crumbs.
- Pour melted butter over entire casserole.
- Bake at 300° to 325° for 15 minutes or until bubbly; do not overbake.
