Ingredients

  • 8 to 10 medium potatoes
  • 1/2 c. chopped onion
  • 2 slices white bread, cubed
  • 1 tsp. paprika
  • 2 sticks butter, melted
  • 1 lb. Velveeta cheese
  • 1 small jar pimentos (4 oz.)
  • 2 Tbsp. parsley
  • 1 tsp. garlic salt

Method

  • Boil potatoes with skin until tender; cut into bite size pieces.
  • Place potatoes in large, flat casserole dish.
  • Mix parsley, paprika and garlic salt together.
  • Sprinkle over potatoes.
  • Mix pimentos, onion and cubed cheese.
  • Place over potatoes.
  • Top cheese with bread crumbs.
  • Pour melted butter over entire casserole.
  • Bake at 300° to 325° for 15 minutes or until bubbly; do not overbake.
