Ingredients

  • 1 lb. round steak
  • 1 Tbsp. diet margarine
  • 2 Tbsp. finely chopped onion
  • 1 clove garlic, crushed
  • 2 large green peppers
  • 1/2 c. celery, diagonally sliced
  • 1/2 c. beef consomme
  • salt and pepper
  • 2 Tbsp. chopped pimento
  • 2 tsp. cornstarch
  • 3 Tbsp. water
  • 1 Tbsp. soy sauce

Method

  • Trim the meat of all fat and cut into strips.
  • Chop onion, garlic and pimento.
  • Cut green peppers into strips.
  • Place diet margarine in a nonstick skillet and heat it over a low heat.
  • Add the strips of beef and brown on both sides.
  • Add onion, garlic, green peppers and celery.
  • Add consomme.
  • Season the whole mixture with salt and pepper.
  • Cover; simmer 20 minutes.
  • Do not boil. Add pimento.
  • Thicken with cornstarch mixture.
  • Cover; simmer the addition for 5 minutes.
  • Makes 4 servings (1001.4 calories in whole recipe; 250.4 each serving).
