Ingredients

  • 1 c. raw rice
  • 1 Tbsp. peanut oil
  • 2 eggs, beaten
  • 3 Tbsp. peanut oil
  • 2 green onions, minced
  • 1/2 c. cooked ham, diced finely
  • 2 Tbsp. soy sauce

Method

  • Saute rice in a little peanut oil for a few minutes.
  • Add rice to water and cook as on package.
  • Heat 1 tablespoon oil in pan over medium heat and add eggs.
  • Stir quickly with fork until thoroughly cooked.
  • Transfer to small bowl and chop into small pieces.
  • Over medium heat (can use same pan, just wipe), add onions and ham. Stir quickly 2 to 3 minutes until golden or your preference.
  • Add rice and soy sauce.
  • Blend quickly.
  • Add eggs.
  • Toss and serve. Serves 6.
