Ingredients
- 1 c. raw rice
- 1 Tbsp. peanut oil
- 2 eggs, beaten
- 3 Tbsp. peanut oil
- 2 green onions, minced
- 1/2 c. cooked ham, diced finely
- 2 Tbsp. soy sauce
Method
- Saute rice in a little peanut oil for a few minutes.
- Add rice to water and cook as on package.
- Heat 1 tablespoon oil in pan over medium heat and add eggs.
- Stir quickly with fork until thoroughly cooked.
- Transfer to small bowl and chop into small pieces.
- Over medium heat (can use same pan, just wipe), add onions and ham. Stir quickly 2 to 3 minutes until golden or your preference.
- Add rice and soy sauce.
- Blend quickly.
- Add eggs.
- Toss and serve. Serves 6.
