Ingredients

  • 3 c. sugar
  • 1 c. white syrup
  • 1/2 c. water
  • 1/8 tsp. salt
  • 2 egg whites
  • 1 c. chopped pecans
  • 1 tsp. vanilla

Method

  • Place sugar, syrup, water and salt in pan. Cook over medium heat until a little dropped in cold water will form a hard ball. Beat egg whites until stiff while syrup is cooking.
  • Pour mix into egg whites, beating continuously.
  • Add vanilla and beat until it loses its glossy look. Add pecans and pour onto buttered platter or drop by spoon on waxed paper. Garnish with pecan halves.
