Ingredients

  • 1 clove garlic, minced
  • 2 onions, chopped
  • 1 to 2 Tbsp. oil
  • 2 to 3 c. chopped tomatoes with liquid
  • 2 to 3 c. kidney beans, cooked
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • dash of pepper
  • 1 to 2 carrots, grated
  • 1 to 2 green peppers, chopped
  • 1 c. raw cashews
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 bay leaf
  • 1/4 c. raisins

Method

  • Saute garlic and vegetables (except tomatoes) in oil.
  • Add nuts, beans, tomatoes, seasonings and raisins.
  • Simmer for 2 hours in covered pot or in slow cooker.
  • Serve over cornbread or pasta, or with fresh bread or rolls.
