Ingredients

  • 6 oz. sharp Cheddar cheese
  • 6 oz. white cheese (Swiss or Monterey Jack)
  • 1 (4 oz.) can chopped green chilies (and juice)
  • 5 eggs, beaten until frothy

Method

  • Grate and mix cheeses together.
  • Line bottom of a 9-inch square ovenproof dish with half of the cheese mixture.
  • Spread green chilies and juice over cheese mixture.
  • Layer remaining cheese. Pour eggs over cheeses and chili mixture.
  • Bake 20 to 25 minutes at 350°.
  • Cut into bars or squares.
  • For a spicier appetizer, add cayenne pepper.
