Ingredients
- 2 qt. sliced cucumbers
- 1 large onion, sliced
- 1 green or red pepper, sliced
- 1/4 c. salt
- 1 1/2 c. sugar
- 1 c. vinegar
Method
- Place cucumbers, onion and green pepper slices in bowl; sprinkle between layers with salt and allow to stand in refrigerator for at least 2 hours or overnight.
- Rinse well and drain.
- Prepare solution of sugar and vinegar.
- Stir until sugar is dissolved.
- Mixture may be heated slightly to dissolve sugar. Place cucumber mixture in freezer bags or boxes and pour solution over to cover.
- Store in freezer.
- Defrost when needed.
