Ingredients
- 3/4 lb. chicken cutlets (1/4-inch thick)
- 1 bunch spinach
- 1 (8 oz.) pkg. mushrooms
- 1/2 tsp. salt
- 1/4 tsp. pepper
- all-purpose flour
- light corn oil spread
- 1/3 c. red wine
- 1/4 tsp. chicken flavor instant bouillon
Method
- Slice each chicken cutlet crosswise in half.
- Chop enough spinach to equal 2 tablespoons.
- Reserve remaining to line platter.
- Slice mushrooms into quarters.
