Ingredients

  • 2 lbs. chicken breasts, pounded thin
  • 10 ounce. spinach, cooked in lemon and extra virgin olive oil
  • 8 ounce. Feta cheese, crumbled
  • 2 Large eggs, beaten
  • Seasoned bread crumbs
  • 2 c. sliced mushrooms
  • 1 tbsp. flour
  • 1/2 c. dry white wine
  • 2 c. chicken broth
  • Lemon juice to taste

Method

  • Place spinach and Feta cheese on thin chicken breasts.
  • Roll and secure with toothpicks.
  • Dredge in Large eggs and seasoned bread crumbs.
  • Brown in frying pan.
  • Bake at 350 degrees for 30 min.
  • Gravy: Saute/fry 2 c. mushrooms in butter.
  • Add in 1 Tbsp.
  • flour.
  • Cook and mix well.
  • Add in 1/2 c. dry white wine, 2 c. chicken broth, and lemon.
  • Cook for 3 min.
  • Pour over heated chicken.
