- 2 lbs. chicken breasts, pounded thin
- 10 ounce. spinach, cooked in lemon and extra virgin olive oil
- 8 ounce. Feta cheese, crumbled
- 2 Large eggs, beaten
- Seasoned bread crumbs
- 2 c. sliced mushrooms
- 1 tbsp. flour
- 1/2 c. dry white wine
- 2 c. chicken broth
- Lemon juice to taste
Method
- Place spinach and Feta cheese on thin chicken breasts.
- Roll and secure with toothpicks.
- Dredge in Large eggs and seasoned bread crumbs.
- Brown in frying pan.
- Bake at 350 degrees for 30 min.
- Gravy: Saute/fry 2 c. mushrooms in butter.
- Add in 1 Tbsp.
- flour.
- Cook and mix well.
- Add in 1/2 c. dry white wine, 2 c. chicken broth, and lemon.
- Cook for 3 min.
- Pour over heated chicken.
