Ingredients

  • 6 Ears Fresh Corn (Husk & Silk Removed)
  • 4 Slices of Bacon
  • 1 Large Red Onion (Coarsely Chopped)
  • 1 Red Bell Pepper (Coarsely Chopped)
  • 1 Green Bell Pepper (Coarsely Chopped)
  • 3 Cloves Garlic (Crushed/Chopped)
  • 3 Tbsp Sugar
  • 1 Tbsp Red Pepper Flakes

Method

  • Cut Fresh Corn from the cob.
  • Scrape the knife blade down each husk to get all the corn and juices.
  • A Bundt Pan works well for cutting the kernals from the cob by resting the cob end in the hole on the bundt pan.
  • Set the corn aside.
  • Heat a heavy skillet over medium heat.
  • Cook Bacon until crisp, remove from skillet and drain on paper towel.
  • Add onion and peppers and saute for approximately 3 minutes.
  • Add Garlic and stir to prevent burning.
  • Add the Corn Kernals, Red Pepper Flakes and cook for an additional 3 minutes.
  • Sprinkle with Sugar and cook until the Corn begins to carmalize.
