Ingredients

  • 1 tbsp vegetable oil
  • 1 None medium Spanish onion, finely chopped
  • 2 None medium red peppers, finely chopped
  • 1 tbsp canned jalapeno peppers, drained, sliced
  • 2 cloves garlic, minced
  • 1/2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 1/2 lb ground chicken
  • 2 (10 oz) cans red kidney beans, rinsed, drained
  • 1 (15 oz) can crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp fresh parsley leaves, finely chopped

Method

  • Heat oil in a large saucepan over medium heat. Cook onion, peppers and garlic, stirring, until onion is soft. Add spices and cook, stirring, until fragrant. Add chicken and cook, stirring, until browned. Stir in beans, tomatoes, tomato paste and parsley. Cook, covered, for 15 mins, or until thickened slightly.
