Ingredients
- 1 (2 1/2 to 3 lb.) fryer, cut into serving pieces
- 1/2 tsp. paprika
- 1 medium onion, sliced
- 1/2 c. frozen orange juice concentrate
- 2 Tbsp. brown sugar
- 2 Tbsp. chopped parsley
- 1 tsp. soy sauce
- 1/2 tsp. ground ginger
- 1/3 c. water
- 1 tsp. sherry
Method
- Brown chicken pieces under broiler.
- Place in casserole; sprinkle with paprika.
- Arrange onion slices over chicken. Combine juice concentrate, brown sugar, parsley, soy sauce, ginger, water and sherry.
- Pour over chicken and onion.
- Cover and simmer until chicken is tender, about 35 to 40 minutes.
