Ingredients

  • 1 (2 1/2 to 3 lb.) fryer, cut into serving pieces
  • 1/2 tsp. paprika
  • 1 medium onion, sliced
  • 1/2 c. frozen orange juice concentrate
  • 2 Tbsp. brown sugar
  • 2 Tbsp. chopped parsley
  • 1 tsp. soy sauce
  • 1/2 tsp. ground ginger
  • 1/3 c. water
  • 1 tsp. sherry

Method

  • Brown chicken pieces under broiler.
  • Place in casserole; sprinkle with paprika.
  • Arrange onion slices over chicken. Combine juice concentrate, brown sugar, parsley, soy sauce, ginger, water and sherry.
  • Pour over chicken and onion.
  • Cover and simmer until chicken is tender, about 35 to 40 minutes.
