Ingredients

  • 1 chicken, boiled, boned, skinned and diced
  • 1 (10 oz.) Cheddar cheese, grated
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 (15 oz.) can Ro-Tel
  • 1 pkg. corn tortillas, cut in 1/4's
  • 1 small onion, diced

Method

  • Grease a 9 x 13-inch pan.
  • In large bowl, mix the two soups, Ro-Tel (cut up) and onion.
  • In pan, first layer is 1/3 of corn tortillas, then 1/3 of chicken, 1/3 of sauce and 1/3 cheese. Continue layering until all ingredients are used, finishing with cheese.
  • Bake at 350° for 1 hour.
