Ingredients

  • 6 chicken breasts
  • 1/4 c. margarine plus 2 Tbsp. oil
  • 1 1/2 c. long grain rice
  • 4 c. chicken broth
  • 1 c. cooking wine (optional)
  • fresh broccoli florets
  • 3 or 4 carrots, sliced thin
  • flour
  • paprika
  • salt and pepper

Method

  • Sprinkle chicken with paprika, salt and pepper and lightly flour.
  • Brown slightly in oleo and oil.
  • Add rice and brown 5 minutes more.
  • Add broth and carrots.
  • Cover with tight fitting lid.
  • Simmer gently for 20 minutes or until liquid is mostly absorbed.
  • Add broccoli, cover and simmer 10 minutes.
