- 6 chicken breasts
- 1/4 c. margarine plus 2 Tbsp. oil
- 1 1/2 c. long grain rice
- 4 c. chicken broth
- 1 c. cooking wine (optional)
- fresh broccoli florets
- 3 or 4 carrots, sliced thin
- flour
- paprika
- salt and pepper
Method
- Sprinkle chicken with paprika, salt and pepper and lightly flour.
- Brown slightly in oleo and oil.
- Add rice and brown 5 minutes more.
- Add broth and carrots.
- Cover with tight fitting lid.
- Simmer gently for 20 minutes or until liquid is mostly absorbed.
- Add broccoli, cover and simmer 10 minutes.
