Ingredients
- 5 c. torn mixed greens, such as red and green leaf lettuce, curly endive, romaine, etc.
- 1 medium tomato, coarsely chopped
- 1/2 small seedless or regular cucumber, sliced
- 1/2 medium red onion, halved lengthwise and finely sliced
- 1 c. Kalamata olives or ripe olives
- 1 c. crumbled Feta cheese
- 1/2 c. sliced radishes
- 1 Greek vinaigrette dressing (recipe included)
Method
- In a large salad bowl, toss together the torn mixed greens, tomato, cucumber, onion, olives, Feta cheese and radishes.
- Cover; chill until serving time, up to 2 hours.
- Just before serving, shake Greek vinaigrette to mix.
- Pour dressing over salad; toss gently to coat.
- If desired, sprinkle with fresh oregano and chive blossoms.
