Ingredients

  • 5 c. torn mixed greens, such as red and green leaf lettuce, curly endive, romaine, etc.
  • 1 medium tomato, coarsely chopped
  • 1/2 small seedless or regular cucumber, sliced
  • 1/2 medium red onion, halved lengthwise and finely sliced
  • 1 c. Kalamata olives or ripe olives
  • 1 c. crumbled Feta cheese
  • 1/2 c. sliced radishes
  • 1 Greek vinaigrette dressing (recipe included)

Method

  • In a large salad bowl, toss together the torn mixed greens, tomato, cucumber, onion, olives, Feta cheese and radishes.
  • Cover; chill until serving time, up to 2 hours.
  • Just before serving, shake Greek vinaigrette to mix.
  • Pour dressing over salad; toss gently to coat.
  • If desired, sprinkle with fresh oregano and chive blossoms.
