Ingredients

  • One 6 oz. package Farmhouse(R) Chicken Rice
  • 3 Tablespoons peanut oil
  • 1/2 cup onion, chopped
  • 1/2 cup green onions, chopped
  • 1/4 cup red bell pepper, chopped
  • 8 oz. boneless, skinless chicken breast, cut into 1/2" cubes
  • 2 eggs
  • 3 Tablespoons soy sauce

Method

  • Prepare rice according to package directions.
  • When rice is prepared, heat oil in wok or large skillet over high heat. Add onions, green onions and red bell pepper. Cook for 2 minutes, stirring frequently. Add chicken and cook until chicken is cooked through.
  • Add eggs. Stir until eggs are scrambled and cooked, approximately 1 to 1-1/2 minutes. Add soy sauce and rice. Continue cooking until heated.
