Ingredients

  • 4 chicken quarters, thighs
  • 1/4 c. extra virgin olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic pwdr
  • 1 sm. Spanish onion, minced
  • 1/2 c. finely minced green pepper
  • 2 teaspoon dry parsley
  • 2 fresh tomatoes, minced

Method

  • Rinse chicken; pat dry with paper towel.
  • Cut 4 (10 inch) squares of foil.
  • Pour 1 Tbsp.
  • oil on each sheet of foil; spread to cover fat.
  • Place chicken on foil squares.
  • Sprinkle with salt, pepper and garlic pwdr.
  • Combine onion, green pepper, parsley and tomatoes; toss.
  • Spoon vegetable mix proportionately over chicken quarters.
  • Fold and seal foil.
  • Place foil packs on cookie sheet; bake at 425 degrees for 45 min.
  • Serve chicken from foil packets.
  • Be careful when opening packets.
  • Steam is trapped inside.
