- 4 chicken quarters, thighs
- 1/4 c. extra virgin olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon garlic pwdr
- 1 sm. Spanish onion, minced
- 1/2 c. finely minced green pepper
- 2 teaspoon dry parsley
- 2 fresh tomatoes, minced
Method
- Rinse chicken; pat dry with paper towel.
- Cut 4 (10 inch) squares of foil.
- Pour 1 Tbsp.
- oil on each sheet of foil; spread to cover fat.
- Place chicken on foil squares.
- Sprinkle with salt, pepper and garlic pwdr.
- Combine onion, green pepper, parsley and tomatoes; toss.
- Spoon vegetable mix proportionately over chicken quarters.
- Fold and seal foil.
- Place foil packs on cookie sheet; bake at 425 degrees for 45 min.
- Serve chicken from foil packets.
- Be careful when opening packets.
- Steam is trapped inside.
