Ingredients

  • 1 whole fryer, cooked (boil 1 hour)
  • 1 Uncle Ben's long grain wild rice
  • 1 can French-style green beans, drained
  • 1 medium onion, chopped
  • 1 can cream of celery soup (low-fat)
  • 3/4 c. low-fat mayonnaise
  • 1 small pkg. sliced almonds (optional)
  • 1/2 c. sliced water chestnuts (optional)
  • 3/4 c. grated sharp Cheddar cheese

Method

  • Cook rice according to directions on box.
  • Debone chicken into bite size pieces.
  • Mix all (except cheese) in a large casserole dish.
  • Bake at 350° for 15 minutes.
  • Take out and sprinkle with cheese on top.
  • Return to oven and bake 15 more minutes.
