- 1 whole fryer, cooked (boil 1 hour)
- 1 Uncle Ben's long grain wild rice
- 1 can French-style green beans, drained
- 1 medium onion, chopped
- 1 can cream of celery soup (low-fat)
- 3/4 c. low-fat mayonnaise
- 1 small pkg. sliced almonds (optional)
- 1/2 c. sliced water chestnuts (optional)
- 3/4 c. grated sharp Cheddar cheese
Method
- Cook rice according to directions on box.
- Debone chicken into bite size pieces.
- Mix all (except cheese) in a large casserole dish.
- Bake at 350° for 15 minutes.
- Take out and sprinkle with cheese on top.
- Return to oven and bake 15 more minutes.
