Ingredients
- 1 lb. potatoes, cooked and sliced
- 1 c. grated low-fat Cheddar cheese
- 2 onions, sliced and sauteed
- 2 eggs
- 1 c. low-fat cottage cheese
- 1 Tbsp. parsley
- salt and pepper
Method
- Layer potatoes, Cheddar and onions in casserole dish.
- In blender, mix cottage cheese, eggs, salt, pepper and parsley.
- Pour this over the potatoes. Bake at 350° for 20 to 30 minutes.
- Top with fresh parsley.
