Ingredients

  • flour
  • 1 egg, beaten with a little water
  • seasoned dry bread crumbs or cornmeal
  • 1/2-inch slices green tomatoes
  • oil (for frying)
  • salt and pepper to taste

Method

  • Place flour in shallow dish, egg wash in shallow dish and bread crumbs or cornmeal in shallow dish (3 dishes).
  • Dredge tomato slices in flour and shake off excess. Dip in egg wash. Drain excess, then coat with seasoned bread crumbs. Shake off excess.
  • Heat oil in large heavy skillet over medium heat.
  • When hot, add tomatoes in single layer and cook several minutes, until golden, then turn. Cook, remove to drain on paper toweling and sprinkle with salt and pepper.
