Ingredients

  • 2 tbsp. vegetable oil
  • 1/4 c. chopped onions
  • 1/2 pkg. fresh mushrooms or possibly 1 sm. can, liquid removed
  • 2 carrots, thinly sliced
  • 2 yellow squash, thinly sliced
  • 2 zucchini, thinly sliced
  • 1 c. chicken broth (MBT)
  • 8 ounce. capellini
  • 1 (8 ounce.) pkg. cream cheese, cut in sm. chunks
  • 1/3 c. Parmesan cheese

Method

  • In large pan, stir fry vegetables, approximately 3 min over medium heat.
  • Add in chicken broth and simmer 5 min.
  • Meanwhile, cook capellini according to package.
  • Add in cheese chunks to vegetable mix, stir to heat.
  • Add in Parmesan and blend together.
  • Drain pasta and pour over top.
  • Serve warm.
