Ingredients

  • 1 (3 lb.) chicken, cut up or boneless
  • 1/4 c. olive oil
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 green pepper, cut in thin strips
  • 1 (16 oz.) can whole tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. sugar
  • 1/2 tsp. each basil and rosemary
  • 2 bay leaves

Method

  • Heat oil in skillet. Add chicken and cook over medium heat about 15 minutes until brown on both sides.
  • Remove chicken. Saute onion, garlic and green pepper just until tender. Combine remaining ingredients. Return chicken to skillet and pour sauce mixture over chicken. Cover and simmer slowly 40 minutes or until tender. Remove bay leaves. Serve with hot thin spaghetti and Parmesan cheese.
