Ingredients

  • 2 tbl. spoons olive oil
  • whole chicken cut up
  • turkey sausage
  • 1 onion
  • sliced mushrooms: 4 cups?
  • 3 cloves garlic
  • kalamata olive tapenade
  • anchovy paste
  • red peppers
  • 1/2 cup red wine
  • 1 cup chicken stock or broth
  • fresh tomatoes, sliced: 5cups?
  • salt
  • pepper
  • pasta
  • parmesan cheese

Method

  • Pre-heat the oven to 350. Just cook through the chicken and the sausage in the olive oil in a large skillet. Put aside. Cook the onions and the mushrooms. Add the garlic. Add kalamata tapenade, anchovy paste, red peppers. Add the red wine. Cook down for a minute or two. Add chicken broth. Cook down for a minute or two. Add fresh tomatoes. Cook for a minute or two. Season. Put the chicken and sasusage into a caserole. Spoon over the sauce. Put into the oven at 350. Bake for thirty minutes. Serve over pasta with parmesan on top.
