Ingredients

  • 1/4 c. extra virgin olive oil
  • 1 chicken, cut up
  • 2 onions, sliced
  • 2 garlic cloves, chopped
  • 2 c. Italian tomatoes (1 pound can)
  • 1 can tomato sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon celery seed
  • 1 teaspoon crushed dry oregano
  • 2 bay leaves
  • 1/2 c. dry white wine
  • 1 teaspoon leaf basil
  • 1/2 teaspoon thyme
  • Green pepper, minced

Method

  • Heat oil in deep skillet.
  • Brown chicken in oil.
  • Remove chicken.
  • Cook onions and garlic in oil till tender.
  • Add in other ingredients (except wine) and blend.
  • Cook for 5 min.
  • Return chicken to pot, cover and simmer for 45 min.
  • Add in wine and some Parmesan cheese.
  • Cook for 15 min.
  • Serve with noodles or possibly spaghetti.
