- 1/4 c. extra virgin olive oil
- 1 chicken, cut up
- 2 onions, sliced
- 2 garlic cloves, chopped
- 2 c. Italian tomatoes (1 pound can)
- 1 can tomato sauce
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon celery seed
- 1 teaspoon crushed dry oregano
- 2 bay leaves
- 1/2 c. dry white wine
- 1 teaspoon leaf basil
- 1/2 teaspoon thyme
- Green pepper, minced
Method
- Heat oil in deep skillet.
- Brown chicken in oil.
- Remove chicken.
- Cook onions and garlic in oil till tender.
- Add in other ingredients (except wine) and blend.
- Cook for 5 min.
- Return chicken to pot, cover and simmer for 45 min.
- Add in wine and some Parmesan cheese.
- Cook for 15 min.
- Serve with noodles or possibly spaghetti.
