Ingredients

  • 1 fryer chicken
  • 10 c. coarse cornbread crumbs
  • 2 c. light bread crumbs
  • 3 tsp. poultry seasoning
  • 2 tsp. sage
  • 1 c. onions, chopped fine
  • 1 c. celery, chopped fine
  • 2 tsp. salt

Method

  • Salt chicken with the 2 teaspoons salt.
  • Cover with water. Cook until tender; debone chicken.
  • Put bread crumbs, seasoning, onions and celery in 11 x 14-inch baking dish.
  • Pour broth over. You may need to add 1 can chicken broth or some water and 1/2 cup butter.
  • Mix well.
  • Have dressing the consistency of cornbread. Add chicken.
  • Bake at 375° for 45 minutes to 1 hour.
