Ingredients

  • 1 bunch broccoli
  • 1 small onion, thinly sliced
  • 1/4 tsp. dried thyme leaves
  • 2 c. chicken broth (homemade or canned)
  • 2 Tbsp. butter or margarine
  • 1 Tbsp. all-purpose flour
  • 1 tsp. salt
  • dash of ground nutmeg or more
  • dash of white pepper
  • 2 c. half and half (light cream)
  • 1/2 c. shredded cheese
  • 1 tsp. chervil

Method

  • Wash and clean broccoli, then cut up.
  • Combine broccoli in medium pan with
  • onion,
  • thyme and chicken broth.
  • Bring to boil, until broccoli
  • is
  • soft.
  • Remove from stove.
  • Reserve a cup of the broccoli for later use.
  • Transfer remaining broccoli mixture to blender.
  • Whirl until pureed.
