- 1 bunch broccoli
- 1 small onion, thinly sliced
- 1/4 tsp. dried thyme leaves
- 2 c. chicken broth (homemade or canned)
- 2 Tbsp. butter or margarine
- 1 Tbsp. all-purpose flour
- 1 tsp. salt
- dash of ground nutmeg or more
- dash of white pepper
- 2 c. half and half (light cream)
- 1/2 c. shredded cheese
- 1 tsp. chervil
Method
- Wash and clean broccoli, then cut up.
- Combine broccoli in medium pan with
- onion,
- thyme and chicken broth.
- Bring to boil, until broccoli
- is
- soft.
- Remove from stove.
- Reserve a cup of the broccoli for later use.
- Transfer remaining broccoli mixture to blender.
- Whirl until pureed.
