Ingredients

  • 3 eggs
  • 1/2 c. butter
  • 2 c. crumbled cornbread
  • 1/2 c. dry bread crumbs
  • 3 1/2 to 4 c. chicken broth
  • 1/3 c. diced onion
  • 1/8 tsp. pepper
  • 1 tsp. salt
  • 2 Tbsp. chopped celery
  • 1 1/2 tsp. poultry seasoning
  • 1 chicken

Method

  • Cook chicken until tender in a large pot of boiling water. Remove chicken, saving broth!
  • Remove meat from bone.
  • Mix all the dressing ingredients well (it will be real soupy).
  • Pour half of the mixture into a greased oblong baking dish.
  • Place chicken pieces on top and cover with remaining dressing mixture.
  • Bake at 450° for 30 minutes.
