Ingredients

  • 2 teaspoons olive oil
  • 3 garlic cloves, mince
  • 1 lb chicken, cut into 1-inch pieces
  • 1 teaspoon thyme
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 2 cups broccoli florets
  • 1 12 tablespoons cornstarch
  • 1 12 cups chicken broth, divided
  • 2 cups brown rice, cooked and kept hot

Method

  • Saute chicken and garlic in oil.
  • Add broccoli and 1 1/4 cups broth.
  • Simmer until almost cooked.
  • Dissolve cornstarch in remaining 1/4 cup broth.
  • Add cornstarch mixture to the skillet and bring to a boil.
  • Reduce heat and simmer until thickened.
