Ingredients
- 2 teaspoons olive oil
- 3 garlic cloves, mince
- 1 lb chicken, cut into 1-inch pieces
- 1 teaspoon thyme
- 12 teaspoon salt
- 14 teaspoon pepper
- 2 cups broccoli florets
- 1 12 tablespoons cornstarch
- 1 12 cups chicken broth, divided
- 2 cups brown rice, cooked and kept hot
Method
- Saute chicken and garlic in oil.
- Add broccoli and 1 1/4 cups broth.
- Simmer until almost cooked.
- Dissolve cornstarch in remaining 1/4 cup broth.
- Add cornstarch mixture to the skillet and bring to a boil.
- Reduce heat and simmer until thickened.
