Ingredients
- 4 large skinless, boneless chicken breasts
- 1/4 c. all-purpose flour
- 1 beaten egg
- 1/2 c. fine dry bread crumbs
- 3/4 c. chopped broccoli
- 1/2 to 1/3 c. grated cheese
- 4 Tbsp. butter
Method
- Pound
- out
- chicken
- breasts
- from
- center
- to 1/8-inch thickness between 2 pieces clear plastic wrap.
- Divide broccoli, cheese and butter evenly into 4 parts.
- Place in center of flattened
- chicken breasts.
- Roll chicken up to cover broccoli mix.
- Coat with flour; dip in egg, then roll in bread crumbs. Place in lightly greased baking pan. Bake at 350° for 45 to 60 minutes.
- Serves 4.
