Ingredients

  • 4 large skinless, boneless chicken breasts
  • 1/4 c. all-purpose flour
  • 1 beaten egg
  • 1/2 c. fine dry bread crumbs
  • 3/4 c. chopped broccoli
  • 1/2 to 1/3 c. grated cheese
  • 4 Tbsp. butter

Method

  • Pound
  • out
  • chicken
  • breasts
  • from
  • center
  • to 1/8-inch thickness between 2 pieces clear plastic wrap.
  • Divide broccoli, cheese and butter evenly into 4 parts.
  • Place in center of flattened
  • chicken breasts.
  • Roll chicken up to cover broccoli mix.
  • Coat with flour; dip in egg, then roll in bread crumbs. Place in lightly greased baking pan. Bake at 350° for 45 to 60 minutes.
