Ingredients

  • 1/2 cups Chia Seeds
  • 2 cups Almond Milk (unsweetened)
  • 7 Dates, Pitted, Divided
  • 1 Persimmon
  • 1 Tablespoon Coconut Milk (canned)
  • 1 Small Orange, Juiced
  • 1/4 cups Fresh Berries
  • Hemp Seeds (optional)

Method

  • Prepare your chia pudding by blending together chia seeds, almond milk, and 4 dates.
  • Set aside.
  • In your blender or food processor, add persimmon and coconut milk.
  • Squeeze in juice from orange.
  • Blend until smooth.
  • In a small Mason jar or cup, layer chia pudding, persimmon cream and remaining dates.
  • Add another layer of chia pudding and persimmon cream and top with fresh berries and hemp seeds (optional).
  • You can repeat with any extras for another parfait.
