Ingredients
- 3 Tbsp. butter or oleo
- 2 Tbsp. flour
- 1 tsp. salt
- dash of nutmeg
- dash of pepper
- 3 c. milk
- 1 (10 oz.) pkg. frozen cut asparagus or broccoli, cooked and drained
- 6 oz. natural Cheddar cheese
- grated Parmesan cheese
- paprika to taste
Method
- Melt butter and blend in flour, salt, nutmeg and pepper.
- Add milk all at once.
- Cook, stirring constantly until mixture thickens and bubbles.
- Cook 2 minutes longer.
- Add asparagus (cut into large pieces) or broccoli and cheese; stir until cheese melts.
- Garnish with a sprinkling of Parmesan cheese and paprika.
- Serves 6.
