Ingredients

  • 3 Tbsp. butter or oleo
  • 2 Tbsp. flour
  • 1 tsp. salt
  • dash of nutmeg
  • dash of pepper
  • 3 c. milk
  • 1 (10 oz.) pkg. frozen cut asparagus or broccoli, cooked and drained
  • 6 oz. natural Cheddar cheese
  • grated Parmesan cheese
  • paprika to taste

Method

  • Melt butter and blend in flour, salt, nutmeg and pepper.
  • Add milk all at once.
  • Cook, stirring constantly until mixture thickens and bubbles.
  • Cook 2 minutes longer.
  • Add asparagus (cut into large pieces) or broccoli and cheese; stir until cheese melts.
  • Garnish with a sprinkling of Parmesan cheese and paprika.
  • Serves 6.
