Ingredients

  • 1 1/2 c. crushed graham crackers
  • 1 1/2 c. sugar
  • 1/2 c. softened margarine
  • 1 c. chopped nuts
  • 2 (8 oz.) cream cheese
  • 1/2 tsp. vanilla
  • 4 egg whites
  • 8 oz. Cool Whip
  • 1 can pie filling

Method

  • Combine graham crackers, margarine, 1/2 cup sugar and 3/4 cup nuts.
  • Press into a 13 x 9-inch pan.
  • Beat egg whites until very stiff and set aside.
  • Cream the 1 cup sugar, cream cheese and vanilla.
  • Fold egg whites into creamed mixture. Do not beat.
  • Pour on top of crust and bake at 350° for 23 minutes.
  • Cool on counter, then refrigerate for 2 to 3 hours until cold. Spread pie filling on top.
  • Ice with Cool Whip. Sprinkle remaining nuts on top. Refrigerate until ready to serve.
  • Serves 12.
