- 1 (3 oz.) pkg. cream cheese
- 2 eggs, beaten
- 3 c. boiled noodles (1 lb.)
- butter
- 1/2 c. cottage cheese, drained
- 1/2 tsp. salt
- cracker crumbs
- 1 chopped onion
- 1/2 green pepper, sliced
- 2 bay leaves
- 1 tsp. salt
- 5 cloves garlic, crushed
- 1 oz. olive oil
- 1 tsp. oregano (flat)
- 1/2 tsp. pepper
- 1 small onion, chopped fine
- 1/2 green pepper, sliced thinly
- 5 garlic cloves, crushed fine
- sprinkle of oregano (1/2 tsp.)
Method
- Saute in small pan with olive oil on low setting 10 minutes. Add to black beans; stir well.
- Add water if needed.
- Add 2 tablespoons white vinegar and stir.
- Let set 30 minutes on low. Cooked beans to be served over rice.
- Sprinkle with finely chopped onions if desired.
- Leftover beans may be cooled and frozen for use with another meal.
