Ingredients

  • 1 (3 oz.) pkg. cream cheese
  • 2 eggs, beaten
  • 3 c. boiled noodles (1 lb.)
  • butter
  • 1/2 c. cottage cheese, drained
  • 1/2 tsp. salt
  • cracker crumbs
  • 1 chopped onion
  • 1/2 green pepper, sliced
  • 2 bay leaves
  • 1 tsp. salt
  • 5 cloves garlic, crushed
  • 1 oz. olive oil
  • 1 tsp. oregano (flat)
  • 1/2 tsp. pepper
  • 1 small onion, chopped fine
  • 1/2 green pepper, sliced thinly
  • 5 garlic cloves, crushed fine
  • sprinkle of oregano (1/2 tsp.)

Method

  • Saute in small pan with olive oil on low setting 10 minutes. Add to black beans; stir well.
  • Add water if needed.
  • Add 2 tablespoons white vinegar and stir.
  • Let set 30 minutes on low. Cooked beans to be served over rice.
  • Sprinkle with finely chopped onions if desired.
  • Leftover beans may be cooled and frozen for use with another meal.
