Ingredients
- 3 Tbsp. all-purpose flour
- 4 skinless, boneless chicken breast halves, cut crosswise in 4 pieces
- 2 Tbsp. olive oil
- 2 c. water
- 1 (8 oz.) box yellow rice with seasoning
- 1 c. frozen green peas
- 1 (6 1/2 oz.) jar pimientos, cut in strips
Method
- Coat chicken in flour.
- Heat oil in large skillet until hot. Add chicken and cook for 4 to 5 minutes, stirring and turning 2 to 3 times until chicken is golden on all sides.
- Remove to a small bowl.
- Pour water in skillet.
- Bring to a boil.
- Stir in rice, seasonings and peas.
- Cover; simmer for 18 to 20 minutes, until most of the liquid is absorbed.
- Stir in chicken and pimientos. Cook an additional 3 minutes or until water is absorbed and chicken is white in center.
