Ingredients

  • 3 Tbsp. all-purpose flour
  • 4 skinless, boneless chicken breast halves, cut crosswise in 4 pieces
  • 2 Tbsp. olive oil
  • 2 c. water
  • 1 (8 oz.) box yellow rice with seasoning
  • 1 c. frozen green peas
  • 1 (6 1/2 oz.) jar pimientos, cut in strips

Method

  • Coat chicken in flour.
  • Heat oil in large skillet until hot. Add chicken and cook for 4 to 5 minutes, stirring and turning 2 to 3 times until chicken is golden on all sides.
  • Remove to a small bowl.
  • Pour water in skillet.
  • Bring to a boil.
  • Stir in rice, seasonings and peas.
  • Cover; simmer for 18 to 20 minutes, until most of the liquid is absorbed.
  • Stir in chicken and pimientos. Cook an additional 3 minutes or until water is absorbed and chicken is white in center.
