Ingredients

  • 2 Tbsp. butter or margarine
  • 1/2 c. onions, finely chopped
  • 1/2 c. celery, thinly sliced
  • 1 c. carrots, thinly sliced
  • 2 c. broccoli florets
  • 1 c. chicken broth
  • 3 c. milk
  • 1 c. Cheddar cheese, shredded
  • salt and pepper to taste

Method

  • In a large pot, melt butter.
  • Add onions and celery; cook for about 10 minutes under medium heat.
  • Add carrots, broccoli and chicken broth.
  • Cover and simmer 20 minutes.
  • Add milk and Cheddar cheese.
  • Stir until cheese is melted.
  • Add cornstarch to thicken, if necessary.
  • Add salt and pepper to taste.
