Ingredients
- 2 Tbsp. butter or margarine
- 1/2 c. onions, finely chopped
- 1/2 c. celery, thinly sliced
- 1 c. carrots, thinly sliced
- 2 c. broccoli florets
- 1 c. chicken broth
- 3 c. milk
- 1 c. Cheddar cheese, shredded
- salt and pepper to taste
Method
- In a large pot, melt butter.
- Add onions and celery; cook for about 10 minutes under medium heat.
- Add carrots, broccoli and chicken broth.
- Cover and simmer 20 minutes.
- Add milk and Cheddar cheese.
- Stir until cheese is melted.
- Add cornstarch to thicken, if necessary.
- Add salt and pepper to taste.
