Ingredients

  • 1 Whole cauliflower
  • 3 large potatoes
  • 1 Mature chedder, grated
  • 1/2 tsp Whole grain mustard
  • 1 dash Franks red hot sauce (optional)
  • 1 Knob of unsalted butter
  • 15 grams Plain flour
  • 1/2 pints Semi skimmed milk
  • 80 grams Grated cheese, I use mature chedder and Gouda

Method

  • Peel and slice the potatoes into thin discs.
  • Blanch in salted boiling water and set aside.
  • Cut up the cauliflower into florets, blanch for 2-3 minutes in salted boiling water.
  • Place in a large casserole dish.
  • Make up the cheese sauce = melt the butter, stir in the flour for 1-2 mins, gradually add the milk stirring all the time till you get a smooth sauce.
  • Season with salt and pepper and simmer for about 8 minutes, stirring slowly.
  • Finally, take off the heat and add the cheese and mustard, stirring untill cheese melted.
  • Pour the cheese sauce over the cauliflower.
  • Add a dash of Franks red hot sauce over the top if you like.
  • Layer the potatoes on top and sprinkle the grated cheese all over.
  • Bake in the oven for about half an hour.
