Ingredients

  • 2 cups flour
  • 1 9/16 cups potato starch
  • 1 1/4 cups sugar
  • 3 eggs medium
  • 1/2 cup milk
  • 7 tablespoons butter
  • grated lemon peel
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 9/16 cup cocoa powdered
  • 4 3/4 tablespoons dark chocolate chips
  • powdered sugar

Method

  • Preheat the oven to 180C.
  • Combine the flour, potato starch, sugar, eggs, milk, butter, grated peel of 1 lemon, and the vanilla extract together and divide the batter into 2 bowls.
  • Add the powdered cocoa to one bowl and the chocolate chips to the other.
  • Butter a bundt or tube pan and begin adding the two types of batter in layers, first one type and then the other, and so on.
  • Sprinkle the top layer with powdered sugar.
  • Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the cake completely before removing it from the pan, sprinkle with powdered sugar, and serve.
