Ingredients
- 8 oz small cauliflower florets
- 8 None eggs, lightly beaten
- 3/4 cup grated Cheddar cheese
- 3/4 cup frozen peas
- 1 tbsp chopped parsley
Method
- Preheat the oven to 350°F. Grease a 12-cup muffin pan.
- Place cauliflower in a microwaveable bowl. Cover with plastic wrap. Cook in microwave on high, 4-5 mins or until tender. Cool. Mix with remaining ingredients in a bowl. Spoon into prepared pan.
- Bake 10-15 mins, until firm. Serve warm.
