Ingredients

  • 2 1/2 c. all-purpose flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. ground cinnamon
  • 3 c. finely shredded carrot
  • 1 1/2 c. cooking oil
  • 4 eggs
  • 1 c. chopped pecans

Method

  • Combine flour, sugar, baking soda, salt and cinnamon in a large mixer bowl.
  • Add carrot, oil and eggs.
  • Beat with an electric mixer until combined.
  • Stir in pecans.
  • Pour batter into 3 greased and floured 9 x 1 1/2-inch round baking pans.
  • Bake in a 350° oven for 25 to 30 minutes, or until a toothpick inserted near the centers comes out clean.
  • Cool on wire racks for 10 minutes. Remove cakes from pans.
  • Cool thoroughly on racks.
