Ingredients

  • 1 (3 oz.) pkg. lemon Jell-O
  • 3/4 c. hot water
  • 1 can cream
  • 1/2 lb. cream cheese, room temperature
  • 1 c. sugar (powdered or granulated)
  • 1/2 tsp. lemon juice
  • 1 tsp. vanilla
  • 24 graham crackers, rolled into crumbs
  • 1/2 c. butter
  • 2 Tbsp. powdered sugar

Method

  • Chill cream overnight in refrigerator.
  • Mix Jell-O and water. Cool.
  • Pour cream into a large bowl; beat until it is like whipped cream, then add mixture of cream cheese, sugar, lemon juice and vanilla.
  • Add Jell-O, which should be slightly jelled.
  • Mix graham cracker crumbs, butter and sugar.
  • Press into a 13 x 9-inch pan.
