Ingredients
- 2 c. all-purpose flour
- 1 c. sugar
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 Tbsp. margarine
- juice of 1 orange
- boiling water
- 1 egg, well beaten
- 1/2 c. chopped pecans
- 1 c. fresh cranberries
Method
- Sift the first 4 ingredients together.
- Combine the melted butter and orange juice then add boiling water to make 3/4 cup. Mix liquid with dry ingredients.
- Add beaten egg; mix well.
- Add nuts and cranberries.
- Pour into greased loaf pan.
- Bake 1 hour at 325°.
- One bag of cranberries makes 3 loaves.
