Ingredients

  • 2 c. all-purpose flour
  • 1 c. sugar
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 Tbsp. margarine
  • juice of 1 orange
  • boiling water
  • 1 egg, well beaten
  • 1/2 c. chopped pecans
  • 1 c. fresh cranberries

Method

  • Sift the first 4 ingredients together.
  • Combine the melted butter and orange juice then add boiling water to make 3/4 cup. Mix liquid with dry ingredients.
  • Add beaten egg; mix well.
  • Add nuts and cranberries.
  • Pour into greased loaf pan.
  • Bake 1 hour at 325°.
  • One bag of cranberries makes 3 loaves.
