Ingredients

  • 1 3/4 c. sugar
  • 3 eggs
  • 1 c. vegetable oil
  • 1 3/4 c. sifted flour
  • 2 tsp. cinnamon
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 3 c. grated carrots
  • 2/3 c. chopped nuts
  • pinch of salt

Method

  • In mixing bowl, beat sugar and eggs until thickened; add oil. Sift flour; add baking soda, baking powder, cinnamon and salt together.
  • Add to egg mixture.
  • Fold in carrots and nuts.
  • Pour batter into prepared pans; bake in preheated oven at 350° for 45 to 55 minutes.
  • Remove from pan; let get completely cold.
  • Serve with Cream Cheese Frosting.
