Ingredients
- 2 c. sifted plain flour
- 1 tsp. baking powder
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 1/2 c. liquid shortening
- 2 c. sugar
- 4 eggs
- 2 c. finely grated carrots
Method
- Sift together the flour, baking powder, soda, cinnamon and salt.
- Set aside.
- Combine the oil and sugar and mix well.
- Add eggs one at a time and beat well after each addition.
- Gradually add the dry ingredients.
- Mix well.
- Add carrots and mix well. Pour batter into greased and floured cake pans.
- Bake at 350° for 50 to 60 minutes.
- Remove from pans and let cool.
- Ice with Nut Icing.
