Ingredients

  • 2 c. sifted plain flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 1/2 c. liquid shortening
  • 2 c. sugar
  • 4 eggs
  • 2 c. finely grated carrots

Method

  • Sift together the flour, baking powder, soda, cinnamon and salt.
  • Set aside.
  • Combine the oil and sugar and mix well.
  • Add eggs one at a time and beat well after each addition.
  • Gradually add the dry ingredients.
  • Mix well.
  • Add carrots and mix well. Pour batter into greased and floured cake pans.
  • Bake at 350° for 50 to 60 minutes.
  • Remove from pans and let cool.
  • Ice with Nut Icing.
