Ingredients
- 1 c. butter
- 2 c. sugar
- 4 eggs
- 2 1/2 c. flour
- 1/4 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. soda
- 2 tsp. vanilla
- 2 large grated carrots
- 1 c. crushed pineapple, drained
- 1 1/2 c. chopped walnuts
Method
- Cream the butter and sugar until mixture is light.
- Add the eggs, one at a time, and beat.
- Add the flour, salt, cinnamon and soda; beat for 1 minute, until blended.
- Add rest of ingredients; beat until blended.
- Put into 2 buttered layer pans (with removable bottoms).
- Bake at 325° for 45 to 50 minutes.
- Remove rings; let cool.
