Ingredients

  • 1 c. butter
  • 2 c. sugar
  • 4 eggs
  • 2 1/2 c. flour
  • 1/4 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 2 tsp. vanilla
  • 2 large grated carrots
  • 1 c. crushed pineapple, drained
  • 1 1/2 c. chopped walnuts

Method

  • Cream the butter and sugar until mixture is light.
  • Add the eggs, one at a time, and beat.
  • Add the flour, salt, cinnamon and soda; beat for 1 minute, until blended.
  • Add rest of ingredients; beat until blended.
  • Put into 2 buttered layer pans (with removable bottoms).
  • Bake at 325° for 45 to 50 minutes.
  • Remove rings; let cool.
