Ingredients

  • 4 egg yolks, save egg white for meringue
  • 2 c. sugar, reserve 1/2 c. for browning
  • 3 1/2 Tbsp. flour
  • 2 c. milk
  • 2 Tbsp. margarine
  • 1/2 tsp. vanilla
  • 1/4 tsp. salt

Method

  • Combine sugar, flour and salt.
  • Gradually add milk to blend; add egg yolks and remainder of milk.
  • Cook over direct heat, stirring constantly.
  • Place 1/2 cup of sugar and 2 tablespoons of margarine in heavy iron skillet.
  • Cook simultaneously until sugar melts and turns a golden brown.
  • (Be careful not to scorch).
  • By the time the sugar is browned the custard should be thickening. Pour browned sugar into custard and stir until blended.
  • Remove from heat and add vanilla.
  • Pour into baked pie shells.
  • Top with meringue and bake at 325° until golden brown.
