Ingredients
- 4 egg yolks, save egg white for meringue
- 2 c. sugar, reserve 1/2 c. for browning
- 3 1/2 Tbsp. flour
- 2 c. milk
- 2 Tbsp. margarine
- 1/2 tsp. vanilla
- 1/4 tsp. salt
Method
- Combine sugar, flour and salt.
- Gradually add milk to blend; add egg yolks and remainder of milk.
- Cook over direct heat, stirring constantly.
- Place 1/2 cup of sugar and 2 tablespoons of margarine in heavy iron skillet.
- Cook simultaneously until sugar melts and turns a golden brown.
- (Be careful not to scorch).
- By the time the sugar is browned the custard should be thickening. Pour browned sugar into custard and stir until blended.
- Remove from heat and add vanilla.
- Pour into baked pie shells.
- Top with meringue and bake at 325° until golden brown.
